Fruit salads are no longer just for summer! Bring this refreshing salad as a side dish to your next holiday party or get together. This fruit salad is so light and refreshing and really balances out some of the heavier food choices we eat this time of year. I don’t know about you but I always feel a little overloaded by all of the rich foods that are eaten around the holidays and sometimes it’s just nice to have something a little lighter to reach for. I can’t keep this around very long though because my daughter is a fruit-aholic and every time I make this fruit salad it disappears within a few hours.
I was inspired to make this salad by the abundance of persimmons at our local farmer’s market in Hilo during the winter. For a few months of the year, persimmons dominate every table stand at the farmer’s market and I just can’t get enough of them. They are crisp, not overly sweet and very refreshing. I use them as a topping in green salads but I thought it would be nice to try a winter fruit salad. Of course I wanted to pair them with my absolute favorite fruit which also happens to be a winter fruit, the pomegranate. You may have already noticed that I include pomegranates in a lot of my recipes, and that is because the few months they are available I hoard them for fear of the day I go to the grocery store and they are no longer available. That day, usually in mid January, makes me so sad!
Apples, another quintessential fall/winter fruit, adds a bit of crunchiness and tartness to the salad, while the mint adds a nice refreshing flavor. I’ve seen some other recipes for a winter fruit salad similar to this and they all use dressings that include oil and/or honey and I just feel like that is an injustice to these beautiful fruits. They already boast enough sweetness to shine through without needing to be overshadowed by more sweeteners. Instead, I feel like a few simple squeezes from some fresh lime really brings out their flavors and balances out all the sweetness while also complimenting the mint and bringing out the refreshing flavor.
- 3 Fuyu Persimmon
- 1 Honey Crisp or Granny Smith Apple
- 1 Pomegranate, seeded
- 1 lime, juiced
- 2 sprigs fresh mint leaves
- Chop the persimmons and apple and add to a medium size bowl along with the pomegranate seeds.
- Toss with fresh mint leaves and fresh lime juice.
