Today I’m sharing one of my favorite recipes for breakfast sandwiches. This recipe is from paleomg.com which is one of my favorite Paleo recipe blogs. Juli’s recipes always turn out great and she is absolutely hilarious. If you haven’t checked out her blog yet you definitely should!
These last few weeks have been CRAZY busy, and I haven’t had a spare moment to cook which is why I don’t have a new one to share with you this week. We had so much going on for Christmas this years plus I’ve been really busy at work. My in-laws are here visiting from the mainland right now so we’ve been trying to spend as much time with them as possible as well.
I made these Pancake Breakfast Sandwiches as our Christmas morning breakfast and they were a huge hit. They remind me of a McGriddle from McDonald’s but obviously not with the disgusting chemicals. I actually made my pancake different from the recipe as described. Instead of using the coconut flour, tapioca flour, baking powder and baking soda, I used Pamela’s Gluten Free Baking Mix instead because I just love it for baking and it doesn’t have any ingredients that I feel are unhealthy. It already has aluminum-free baking powder added so that’s why I omitted it when I made it. - 3 eggs, whisked
- ½ cup almond milk + 3 tablespoons (carton, unsweetened)
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
- ½ cup coconut flour
- ½ cup tapioca flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- pinch of salt
- coconut oil or ghee, for greasing pan
- 1 pound ground pork
- 2 tablespoons sage
- 2 tablespoons maple syrup
- ½ teaspoon salt
- 8 eggs, whisked
- salt and pepper, to taste
- butter or ghee (for garnish, optional)
