Oh my gosh I know what you’re thinking…beets are the worst! Actually no, they are frickin’ delicious and one of my favorite vegetables because they are LOADED with folate, manganese, fiber, potassium, phosphorus, and the list goes on. I don’t know what any of those do for you (just being honest) but I do know that you’re body needs ’em and they’re good for you so eat up! Dessert recipes are so much more fun than veggies but if you’re serious about improving your health as well as looking and feeling you’re best, you’re going to have to make vegetables a main staple in you’re every day diet, so my job is to help you make them as fun and tasty as possible!
Beets used to be the vegetable that I would buy because I knew they were loaded with nutrition and thought I would find some way to cook them that week but they always ended up uneaten and rotten in my garbage can. Once I actually figured out that beets are super easy to make, seriously all you need to do is drizzle them with some kind of fat and put them in the oven, they’ve become one of my staples each week for dinner. I wanted to add a little more excitement to the recipe than just beets and oil though so I added in some leeks, orange, honey and goat cheese to really spice things up.
I’ve been in a little bit of a funk lately that I can’t seem to swing out of, I’ve been dealing with a lot of stress at work and I haven’t been feeling well because I’ve been taking Accutane now for over a month to try to clear up my face. If you’ve ever been on Accutane you know what I mean when I say that is some powerful stuff…dry, bloody lips, migraines, muscle pain/fatigue, sore eyes and even brittle hair. One thing I really love about though is that I only have to wash my hair about once every other week because my scalp doesn’t even produce oil anymore, so score! My face has yet to clear up though so ugh, but crossing my fingers it works. Anyone who has dealt with adult acne knows how bad it sucks when you’re almost 30 years old and dealing with painful zits like you’re a teenager in puberty.
I have hope though, it will get better!

- 4 medium beets
- 3 large leeks
- 2 tbsp olive oil
- juice of ⅓ orange (about 2 tbsp)
- 1 tbsp honey
- salt to taste
- Optional goat cheese to garnish
- Preheat oven to 400 degrees.
- Peel your beets and cut them in half, then slice them thinly. Slice your leeks thinly. Add both to a large cookie sheet.
- In a small bowl mix together the olive oil and orange juice. Use a spoon to pour over the beets and leeks.
- Use a spoon to drizzle the honey over beets and leeks, and then sprinkle with salt. Place in the oven and bake for 30 minutes or so. Pull out of the oven to serve immediately, and garnish with goat cheese if you desire.
